The best brewing temperature for tea depends on its type (green or black). It's a good idea to warm the tea pot (or cup) prior to pouring the tea. Brewing times and amounts of tea are approximate. Experimate with the brewing time until it's just right for your palate.
For black tea, the water should be boiling. At Denver's altitude, the boiling temperature for water (203 F) is about 9 degrees lower than at sea level (212 F). Black tea is usually brewed for about 3-4 minutes. Ceylon Pearl black tea can be steeped 3-4 times. Use 2-3 grams (about a teaspoon) of loose-leaf tea per cup in an infuser.
Never brew green teas in fully boiling water! Water for green tea should be around 180-185 degrees Fahrenheit. Once the kettle boils, remove from heat and let set about one minute to cool to the proper temperature. Green tea is usually brewed for about 1-3 minutes. Ceylon Pearl green tea can be steeped 3-4 times. Use 2-3 grams (about a teaspoon) of loose-leaf tea per cup in an infuser.
